Good morning. How's everything going? The entire west coast of this fine country is freezing cold, but otherwise I am fine.

A guy with a big beard holding a to-co container filled with cooked chicken pieces.
I borrowed this image from Slate. Dan Kois took it.

There's a chicken restaurant outside of Washington DC that ended up at the top of a list of Tim Carman (of the Washington Post)'s Top 10 Casual Restaurants list. Dan Kois wrote a story about what that has been like for them - in short, it sounds very challenging. Obviously you'd rather have the good reviews and the accompanying business than go without it, but the pressure to take advantage of the lucky break and satisfy an overwhelming crush of customers seems to be taking its toll over there. The worst part is the johnny-come-lately trend-chasers who parachute in with unreasonable expectations. Don't be like that!
